When quantitative information is needed — in other words, when it is important to know precisely how much of a specific allergen is present — ELISA testing is the gold standard.
ELISA, or Enzyme-Linked ImmunoSorbent Assay, is a type of test that requires specialized lab equipment and solid lab skills. Testing can take anywhere from 1-4 hours, but will return a precise value, usually measured in PPM, for the analyte in question. Because tests should be run in duplicate and alongside premade standards, ELISA testing only truly becomes cost-efficient when testing several samples at a time.

The ELISA SYSTEMS assay is an enzyme-linked immunosorbent assay (ELISA) that may be used to screen food products for the presence of allergenic material caused by cross-contamination. This assay is a rapid and reliable test that significantly reduces the time required to screen food products and environmental samples for the presence of allergens.

he Hygiena AlerTox® ELISA tests are quantitative sandwich ELISAs designed for analyzing food, beverage, and surface samples for common allergens. An antibody directed against the target antigen (protein) is bound on the surface of a microtiter plate. Antigen-containing samples or standards are given into the wells of the microtiter plate. After 20 minutes incubation at room temperature (15 – 25 ºC/59 – 77 ºF), the wells are washed with diluted washing solution to remove unbound material. A peroxidase-conjugated second antibody directed against the same antigen is given into the wells and after 20 minutes of incubation the plate is washed again. A substrate solution is added and incubated for 20 minutes, resulting in the development of a blue color. The color development is inhibited by the addition of a Stop Solution, and the color turns yellow. The yellow color is measured photometrically at 450 nm. The concentration of the antigen is directly proportional to the color intensity of the test sample.
