The OnSite® Gluten test kit is a simple and effective rapid test to detect gluten in products and on surfaces.
The assay is intended for laboratory and industry use, including within food production facilities, commercial kitchens, contract laboratories, and auditing programs.
OnSite® Gluten is able to detect gluten from wheat, barley, and rye. It is suitable for both baked and raw foods (solids, powders, and liquids) and environmental surfaces. Its status as an AOAC-PTM validated method (Certificate NO. 012501) makes it suitable for use under a variety of food safety certifications and schemes.
OnSite® Gluten features an adjustable LOD for product testing: The detection limit can be set to 5, 10, or 20 mg/kg (ppm) gluten in food products. Semi-quantitative testing allows the kit to meet each user’s individual needs. Surface monitoring LOD is purely qualitative.
OnSite® Gluten uses the 2D4 antibody. Studies indicate the 2D4 antibody is similar to the R5 and G12 in most ways, but also has an improved affinity for deamidated gluten. This means it’s uniquely capable of identifying gluten in products that have been exposed to heat, acid, or other forms of processing (check the IFU or contact us for matrix limitations and suggestions).
Some rapid tests undercount gluten in baked or heat-treated foods and are only able to detect at a 10ppm LOD. Unlike them, OnSite® Gluten is able to detect as little as 5ppm gluten in baked and heat-treated products.
